Our 2014 Wild Ferment is 100% Switchback clone 52 Pinot Gris. The grapes were harvested October 21, pressed and put into an 800-litre Amphora to ferment on native yeast with zero winemaking intervention.
The wine was left on skins for eight months, pressed and then left to rest for an additional two months before being filtered and bottled August 2015. No SO2 or other additives were used in this wine.
